  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar (adjust to taste)

For the Vegetables and Tofu:

  • 1 block (14 ounces) firm tofu, cut into cubes
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, etc.), chopped
  • 1 cup green peas (frozen or fresh)
  • Fresh cilantro leaves for garnish (optional)
  • Lime wedges for serving (optional)


  1. Prepare the Dry Curry Sauce:

    • Heat the vegetable oil in a large skillet or wok over medium heat.
    • Add the chopped onion and garlic, and sauté until they become soft and translucent.
    • Stir in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for about 1-2 minutes until fragrant.
    • Pour in the vegetable broth and soy sauce. Stir well to combine.
