Tofu Burrito: Vegan Breakfast Burrito Recipe
Ingredients:
For the Tofu Scramble:
- 4 pieces of Tung Lam Tofu Keras, drained and crumbled
- 1 tablespoon olive oil
- 1/2 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 teaspoon turmeric powder (for color)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons nutritional yeast (optional, for added flavor)
For the Burrito:
- 4 large whole wheat or spinach tortillas
- 1 cup cooked quinoa or brown rice
- 1 cup black beans, canned or cooked
- 1 cup diced tomatoes
- 1/2 cup diced avocado
- 1/2 cup salsa
- Fresh cilantro leaves (optional)
- Hot sauce or vegan cheese (optional, for extra flavor)
Instructions:

Prepare the Tofu Scramble:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and bell pepper. Sauté for about 3-4 minutes until they begin to soften.
- Add minced garlic and cook for an additional 1 minute.
- Add crumbled tofu to the skillet and season with turmeric, cumin, paprika, salt, and pepper. Stir well to combine.
- Cook for 5-7 minutes, stirring occasionally until the tofu is heated through and has a slightly golden color.
- If using nutritional yeast, sprinkle it over the tofu and mix it in. This will add a cheesy flavor.

Assemble the Burrito:
- Warm the tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.
- Lay out each tortilla and add a scoop of the cooked quinoa or brown rice down the center.
- Top with a portion of the tofu scramble, black beans, diced tomatoes, diced avocado, and salsa.
- If you like it spicy, you can add hot sauce or vegan cheese at this point.
- Sprinkle fresh cilantro leaves on top for added freshness.

Fold and Roll:
- Fold in the sides of the tortilla over the filling, then fold up the bottom and roll it tightly to form a burrito.

- You can serve the Tofu Breakfast Burritos immediately, or you can wrap them in foil and keep them warm in the oven until you're ready to eat.
